About Victoria

It started with a dog-eared copy of a French pastry cookbook, a borrowed stand mixer, and an absolute refusal to buy a supermarket cake for my mother's birthday. That first attempt — a lopsided Victoria sponge with a slightly sunken middle — was, to my family's polite horror, declared magnificent. I was hooked.

Over the following years, I trained in patisserie through a combination of evening classes, a stage at a Parisian boulangerie, and an obsessive amount of self-directed practice. I learned the architecture of a perfect macaron shell, the patience required for sugar flowers, and the precise chemistry behind a flawless mirror glaze.

Bloom&Bite was born from a simple conviction: that everyone deserves a cake made with genuine care. Not a production line cake, not a catalogue cake — but one designed specifically for you, made by hand, and baked with the same attention I'd give if it were for my own family.

Today, from my kitchen in Surrey, I work with clients across London and the Home Counties — creating wedding tiers that become the centrepiece of the most important days, birthday cakes that make people cry happy tears, and macaron collections that get talked about long after the last one is eaten.
